Kerala Sadya Olan is a delicious and mild curry recipe made with white pumpkin or kumbalanga and coconut milk. It is yet another essential dish of a Kerala sadya. It is a very simple dish and also mildly spiced. Kerala sadya olan recipe is prepared without adding any spice powders. Addition of coconut milk and green chilly gives this dish a unique taste, aroma and flavor.

We have already made a similar Olan recipe some time back. There we have added few spice powders. But this is completely a Sadya style Olan. It is similar to Kerala Stew where the vegetables are cooked in coconut milk. Olan is traditionally made with white pumpkin or kumbalanga but in some places they add Yellow Pumpkin instead. If you want to add cow pea/van payar you can add half cup of boiled cow pea to the recipe. But I have used only White Pumpkin.

Olan is usually served with steamed rice but you can also have with roti or appam as the flavors are similar to stew. Also checkout our Nadan Olan Curry

    Directions

    This is a less spicy dish so everyone including children would enjoy it. So do try it out!! Let's get started.

    Step1

    Slice the white pumpkin thinly as shown above and prepare the other ingredients.

    Step2

    In a heavy bottomed pan preferably a clay pot add in the sliced white pumpkin.

    Step3

    Then add the slit green chilies, thinly sliced ginger and salt to taste.

    Step4

    Now its time to add the thin coconut milk. Give a nice stir.

    Step5

    Allow the curry to simmer in low flame with the lid on for the white pumpkin to cook.

    Step6

    After about 5 minutes, check whether the pumpkin is cooked. Once the pumpkin is cooked, simmer in medium flame till a little thick consistency is reached. Finally add the thick coconut milk, heat through 2 minutes and switch off the flame. Don't boil the Olan after adding thick coconut milk.

    Step7

    Add the curry leaves and coconut oil. Mix well and cover it and allow it to stand for 10-20 minutes before serving for the flavors to set in.

    Our simple and humble Kerala Olan is ready to be served :-) Enjoy with Kerala red rice (matta rice) or idiyappam.

    Conclusion

    After adding thick coconut milk do not boil the curry as it might curdle. You can even use yellow pumpkin along with white pumpkin for this curry.
